Storage

It is not enough to harvest, it also needs to be preserved, which is why today we will consider how to store beets and carrots in winter at home. And both in the house and in the city apartment. Of course, it is much easier to store crops in the house - there is a cellar where you can create excellent conditions. The apartments do not always have sheds, garages or a house basement. Consider storage methods suitable for both the cellar and the city apartment.

Preparing the crop for wintering

A necessary condition for the preservation of the crop is not only the creation of storage conditions, but also the correct collection. Here are some tips to help.

A week before harvesting carrots and beets, water and weed the beds. Now, until the very collection, they do not need to be touched.
After 4 days after this, it is necessary to cut the tops. Not under the root, leave 1.5-2 cm.
After another 3 days, the crop is dug up, the tops are cut off at the root.

Try to dig up the crop carefully so as not to damage the root crops - carrots and beets with mechanical damage are not removed for storage.

Then lay the harvested crop in a single layer in the sun to dry.

Peel off large clods of earth, but if they are very dry, do not tear off, you can damage the vegetable. Remember! It is impossible to wash the crop before harvesting for storage.

After drying, put the crop on hardening. For this process, a room with a temperature of 10-15ºС is suitable. Hardening lasts an average of 9 ± 2 days.

At the end of hardening, it is necessary to sort out the crop. All damaged fruits are removed from the general pile - they will be used first. Those fruits that do not have mechanical damage, rotting and other sores are sorted by growth into three categories: small, medium and large. Store in order from largest to smallest.

Storage methods

The most popular ways are:

  • in sand;
  • in sawdust;
  • in clay;
  • in the husk;
  • in bags (polyethylene).

Storing carrots and beets in sand

Most effective method is storage in the sand. For better preservation of fruits, river wet (but not wet!) Sand is mixed with chalk or dry slaked lime in proportions of approximately 200 g of chalk per 10 kg of sand. This will create an alkaline environment and the vegetables will be preserved. However, do not forget that after such storage, vegetables must be washed more thoroughly.

Now we put the harvest in storage. To do this, 3-5 cm of sand is poured into a wooden box. Carrots or beets are placed on top in 1 layer. Vegetables must not touch. Then you fall asleep on top of the sand so that they are hidden. Put the next layer of vegetables. It turns out a layer cake. Sand is poured in the last layer, the box is closed with a lid.

Do not place the drawer directly on the floor - it is necessary to install it on a stand 10-15 cm high. And do not press the drawer against the walls - condensation may form on them, which should not pass to the storage boxes.

Do not put more than 20 kg of vegetables in one box.

Now about how to store beets and carrots at home in sawdust. Just like in the sand. The whole process is absolutely identical, except for one thing - you do not need to mix them with chalk or lime. Coniferous sawdust themselves release substances necessary for the preservation of carrots and beets.

Storage of carrots and beets in clay

Storage in clay provides two possible options - in boxes or in clay-garlic mud. For the first option, you need to prepare clay sour cream. Half a bucket of clay is added to half a bucket of water and left for a day.

The clay will get wet, and it will be possible to mix it well. Then it is again filled with water so that the clay is 2-3 cm below the water level. This is left for a few more days. When the clay becomes like sour cream in consistency, you can pour vegetables.

Take a box, line it with foil. Put a layer of vegetables and fill with clay. Let dry. Put the next layer of carrots, pour again. When everything is filled, close the film and cover with a lid. Store boxes by analogy with the sand method.

The second clay method is storage in a garlic mash. To prepare the mixture, you need to pass 1 cup of garlic through a meat grinder and pour 2 liters of water.

Clay mortar is made in the same way as in the first case. Now vegetables are soaked first in garlic, then in clay. After that, put to dry. When the fruits have dried, they are put in boxes and put away for storage.

The method in bags is convenient for apartment storage, but only if you have a room with a humidity of about 95-98%. For example, house basements. They are usually damp due to nearby water supply and heating systems.

Polyethylene bags with a capacity of 5-25 kg are taken, filled with vegetables. Carrots in a bag should be well ventilated, so either leave the bag open or make drainage holes in the bag itself. For reliability, you can shift the vegetables with fern leaves - so they definitely do not deteriorate.

Storage of carrots and beets in onion skins

The last way that apartment owners without basements and a garage can use is storage in onion skins.

Carrots and beets are placed in canvas bags mixed with husks and placed in a dark, cool corner.

Despite the variety of ways, the crop is best preserved anyway in the cellar. It is almost impossible to maintain the right climate in an apartment without compromising the health of the inhabitants and the interior of the apartment.

But, the last two options can only be considered if long-term storage is planned.

What to store?

So, when you have already decided on the location of the vegetable for the next few months, you should think about ways to store beets for the winter at home. To a large extent this depends on the expected storage time of the beets and the selected location.

If you plan to use beets within the next month, then storage in the refrigerator, in ordinary plastic bags, is also suitable. Packages must not be sealed tightly. so that the beets do not deteriorate from excess moisture.

You can do it yourself in a package small holes. In the refrigerator itself, the moisture should also not be increased.

You can store beets in special boxes right in the kitchen. It is better to keep such a box away from the stove. Better at the balcony door or window. A little longer you can store beets in the shade, under the bed or in the pantry in large bags. Kilograms for 20-30. Again, the bag must not be tied, otherwise the beets will start to rot.

If you plan to eat beets harvested in the fall until spring, then you should consider other options. It is very good to store beets in wooden boxes lined with foil. At the same time, beets are sprinkled with wood ash, chalk shavings, sawdust, sand, or each tuber is dipped in a clay mash.

All this is done so that the vegetables do not touch each other. This greatly extends their shelf life. Sand, before use, must be well calcined.

In the house, boxes with root crops descend into the underground. In the apartment you can store them on the stairwell or on the balcony. The balcony must be glazed.

Temperature

most favorable the temperature for the preservation of the beet crop ranges from 1-4 ºC. These temperatures must be strictly adhered to.

When the thermometer falls below one degree, beetroot freezes and is exposed to various diseases. When exceeding 4 degrees, fruit wilting and weight loss are possible.

It is also necessary to maintain humidity in the air from 80 to 85%.

Shared storage features

Storage conditions for beets and carrots are largely the same. They can be stored in the same cellar or on the same balcony.. And even in one box. But, only on condition that they do not touch.

A layer of sand (sawdust, wood ash) is poured into the box, then vegetables are laid out. Be sure to keep a short distance from each other. Then another layer of sand. And again vegetables.

When stored in one bag, the keeping quality of both carrots and beets decreases. And, accordingly, the shelf life of vegetables is reduced.

Timing

Even at room temperature, beets can be stored for about a week.. Thick skin prevents rapid loss of moisture. The content of the root crop in the refrigerator, in a plastic bag extends the shelf life up to a month.

Sprinkled with sand, sawdust, ash and chalk shavings, as well as processed with clay mash, vegetables can be stored for about four months if located directly in the room.

To increase the shelf life of beets, it is necessary to sort out vegetables from time to time. Remove spoiled fruits from boxes and bags. You shouldn't do this too often. The skin may be damaged. When stored in a refrigerator, condensation must be prevented.

  5. Put the bag in a cool place.

The temperature must not exceed 10 ºC. When making punctures, be very careful. In order not to hurt the fruits.

Banks

Is there a way to store carrots?: when it is washed, dried and put into three-liter jars tops up.

Then this jar upside down and put on a shelf in the cellar.

Based on the fact that the storage conditions of beets and carrots are similar, it can be assumed that this method is also suitable for beets.

The only difference between these root crops is in shape and size. After all, beets of large and medium size just won't fit in the neck. And, therefore, this method of storage is relevant only for small beets.

Fridge

As already mentioned, beets are stored in the refrigerator for about a month. This method is good for a small amount of vegetables..

If the refrigerator is exactly what you need, then you need to do the following:

  1. Select fruits of medium size.

  3. Wipe off the dirt with a dry cloth.
  4. Trim the tops to 1 cm.
  5. Put root vegetables in a bag.
  6. Make small holes in the bag.
  7. Put the bag of vegetables in the drawer for vegetables at the bottom of the refrigerator.

However, the shelf life of beets in the refrigerator can be extended. If, instead of conventional bags, use vacuum. So the beets are stored twice as long. Read about storing carrots at home.

Underground house

The basement is the most common place to store vegetables.

Even before laying vegetables in the cellar, you need to do the following:

  1. Clean up, ventilate.
  2. Treat the walls with lime mortar.
  3. Rid the cellar of rodents.
  4. Raise the bottom row, on which there will be boxes or bags of beets, 15 cm from the floor.

In the subfield prepared in this way, you can place on the floor are boxes or bags of beets. You can separate a special section and store the beet crop there. The height of the restriction of this section can reach up to a meter.

Besides, beets can be stored in bulk on shelves lined with straw or burlap. Mindful of the danger of contact with the walls, here you need to make a limiter. Also about 15 cm.

Root crops should be poured onto the shelves in the form of a pyramid. Leaving a gap between the vegetables and the top shelf to keep vegetables from spoiling.

You can lower boxes with beets sprinkled with chalk into the underground of the apartment, ash, sawdust and sand. Here everything is the same as when stored in an apartment. There are such ways to store beets as, and.
